Tikka Masala
Ingredients
For the Tofu
400 g nature tofu, pressed and cut into bite sized pieces (to get the liquid out)
1 teaspoon vegetable oil
1 teaspoon garam masala
¼ teaspoon salt
¼ teaspoon ground black pepper
For the Curry Sauce
1 tablespoon vegetable oil
1 large onion, finely diced
4 garlic cloves, finely chopped or crushed
1 tablespoon fresh ginger, grated
1 teaspoon garam masala
1 teaspoon chilli powder
1/2 teaspoon turmeric
1 tablespoon tomato paste
1 x 400 g can chopped tomatoes
100 g plant-based yogurt
100 g coconut cream
2 tablespoons fresh coriander, chopped
Salt and pepper to taste
